Pier-Jean Malandrino 704ba550d4 feat: make document max size configurable via MAX_FILE_SIZE_MB env var 
Replace hardcoded 5 MB upload limit with a configurable setting.
Backend exposes the value via /api/health, frontend reads it
dynamically for validation and UI messages.
