test: Add tests for Ceph, backup, replication, and snapshot methods

Add tests for previously uncovered State methods:
- UpdateCephClustersForInstance
- UpdateBackupTasksForInstance
- UpdateReplicationJobsForInstance
- UpdateGuestSnapshotsForInstance

Improves internal/models coverage from 80.4% to 89.6%.
